Here we go- I made the tuna melt sandwiches last night- and so this list will last me through next Monday.
Tuna melt sandwiches- mix tuna with mayonnaise and pickle relish- broil or grill until outside is browned and cheese is melted. Pears for a side, and banana bread for dessert.
Grilled chicken mozzarella sandwiches topped with salsa – I’m going out on a limb with this one- I know the mozzarella sandwich and salsa tastes good- my husband just needs more protein than that- so I’m adding chicken and hoping it will work out. Maybe I’ll just cook the chicken and have it separate from the sandwich with salsa though.
Meatloaf minis with homemade mashed potatoes- let me know if you want this recipe- it’s my mom’s famous one!
Thai peanut butter noodles and vegetables with mango sticky rice for dessert- my husband just concocts this and it is seriously better than any restaurant. Sorry no recipe- but it’s amazing! And the mango sticky rice is incredible as well.
Tilapia with wild rice and vegetables- I have never cooked tilapia before- any killer great recipes you know of?
Grilled Mango Burgers- grill the mango, grill the meat, put it on a homemade bun- and you have got it!
Chicken Divan- broccoli, chicken, yellow cheese and cream of chicken soup mixed with mayo and cumin. Add dried bread crumbs on top with this recipe. Cook rice on the side- and serve this over the rice for a delightful meal.
I don’t know why this is so hard for me to make a dinner list- but it really does save me so much time in the long run. Thanks to all of you for keeping me doing this every week!

Ummm. Bread your tilapia, bake or fry it, then serve with mango salsa. Yum!
