Mango Peach Quesadillas!
This one is pretty simple, but tasty. My method (of blending all the ingredients together) may seem a little odd, but it works. I got the idea from Rachael Ray (these quesadillas that she makes are really good too!) and it works well when you want to incorporate a lot of extra ingredients into your quesadillas. I used black beans as a protein in this recipe because they’re very inexpensive and so good for you. The Mango Peach salsa is my favorite salsa of all time – seriously, I love it (in fact, I pretty much planned my wedding reception around it, but that’s a whole other story). Well, I think that’s enough of an introduction, here’s the recipe:
Mango Peach Quesadillas
Ingredients:
12 flour tortillas (I use whole grain)
1 15 oz can black beans, drained and rinsed
1 cup Mango Peach Salsa (I use Chachies brand)
8oz Shredded Mexican blend cheese (I use one with pepper jack)
Cooking spray
Sour Cream
Directions:
Place the beans, salsa and cheese into the food processor. Pulse until mostly smooth.
Pre-heat a medium skillet over medium heat. Spray the pan with cooking spray. Lay a tortilla in the pan. Spoon 1/3 cup of the filling onto one side of the tortilla, spread to edges. Cover pan with lid. Cook until tortilla is browned. Fold tortilla in half and remove from pan. Repeat for remaining tortillas. Allow to sit at room temperature for 5 minutes before slicing and serving – this will allow the cheese to set and make it less messy to eat. Serve with sour cream
Makes 12 “pocket” quesadillas – serves 6 as an entree (2 per person), 12 as an appetizer (1 per person)
(Note: Even if you don’t need to make this many quesadillas, you can still make up the whole mix, and store it in the refrigerator to use for lunches and snacks throughout the week.)
Here’s what I spent on this recipe:
Tortillas - $2.03 / 10 at Walmart, used $.35 coupon – total for 10 $1.68, used 12 – total $2.02
Black Beans – bought at Smith’s Case Lot sale - $.38
Mango Peach Salsa - $2.50 / 16oz, used 1 cup – total $1.25
Cheese - $2.09 / 8oz at Target, used $1.00 coupon and $1/2 Target coupon – total $.59
Sour Cream - $1.00 / 8oz at Walmart, used $.50 coupon - $.50
Grand Total - $4.74 for 6 servings, $.79 for each serving

TCBY Wednesday Waffle cone .99!

If you haven't checked this sale out yet- go here and look at it! Cereal is .49 a box or FREE, yogurt is .50 for a 4 pack and although I normally try not to spend more than $1.79 for roast- for fathers day I threw a cross rib roast in the crock pot- when I usually use a chuck roast- and it was the most tender delicious roast I have had for a really long time- so I also grabbed a cross rib roast for $1.88 that I'm sticking in my freezer for later. I thought .10 more per pound for that amazing delicious and better meat- I'm going with it.
There are two double coupons in the ad you can use while there too! That makes for some free stuff! Here is the PYP double coupon list of free or dirt cheap things you can get with your double coupons this week.
Also just so you know if you buy 5 Starkist pouches you will get $1 OYNSO catalina that will print and that you can use like cash next time you go to the store. If you find a tear pad for $1.50/3 of them that makes the pouches .25 each- and then with the catalina even more insanely cheap. I heard they still have some at the Lehi Albies and the Orem State St. one if you wanted to check it out. There weren't any tear pads at my store, and like I said my other coupons were expired, so I got four cans of tuna and although I paid the full price after the instant savings of .75 each for them- I still felt pretty good about that. (The catalina will NOT print for the cans- and the cans are 5 ounces where the pouches at 2.5 ounces- I figured more ounces for my food storage if I don't have a coupon.)
Anywho here is my picture and list for the week.

One more disclaimer- we don't eat Frosted Flakes- but they were free after the sale and coupons, and I love giving things to the Utah Food Bank that I know other people enjoy. So even if you don't eat Frosted Flakes- go ahead and get it and maybe consider donating it to someone in need or a shelter.
I paid .18
That's a savings of 99%!
I did use my $10 catalina from a sale there two weeks ago- but I felt great about what I was able to get, even if I didn't use that catalina.
I plan on spending $5 for 2 things of Banana Boat sunscreen and since I saved so much today, my budget for the week is so full- I'll have A LOT of wiggle room for eating out and miscellaneous items on the trip we're leaving on Saturday for.

Expo TV- Try it!
Expo TV takes people like you and me and asks us to review products we already have around our house, such as TV's, strollers, washing machines, cereal, toys, shampoo and hundreds of other items. They pay you $5-$20 based on how much they want a review of that product. You do have to have access to a video camera to participate, but you can always borrow one for awhile until you get enough saved in your paypal account and then buy one on Amazon or craigslist. (Used video cameras are great because people buy them, hardly ever use them, and then sell them because they realize they haven't been using them, but for hundreds of dollars less than they originally purchased it for.)
I have done a few reviews for them and have gotten actual money in my paypal account- or sometimes they ask for special reviews with different rewards- like a Pizza Hut gift card or an Estee Lauder $50 gift set. It actually has been a really fun activity for me and my husband to do together after my little boy is asleep, AND we're MAKING money on it!
My friend just signed up and said that she is getting $25 for her first review of ANY product listed if she posts it before a certain date. The videos have to be at least 1 minute- so 5 minutes making the video, 5 minutes to upload it and in less than 10 minutes you will have made $25! (If they offer you the same deal)
One last part of the company is their tryology program. You check out what products you want to try that they have available- and if you qualify they send you a full size product that you do a review about. I just signed up for their Cheer tryology program and they're shipping a full size container to my house right now! Free stuff, making money by having fun? What more can you want from a job?
I'm excited to see all your reviews that will soon popping up and let me know when you do one- because for every person that watches your review you also get more money. It's only a couple cents per view, but if you get one that a lot of people have watched- that's even more money for you!
