Because every night I sit and think for 30 minutes what am I going to make for dinner tonight, I decided last night I would go through my recipes and food items I needed to use and decide what I wanted to make for the week and make a list. This is what I came up with, and it wasn't as bad as I thought it would be. I'm excited for my dinners this week!
Monday- Soft Shell Tacos - I know today is Tuesday, but just giving you ideas.
Tuesday- French Dip Sandwiches - Throw a chuck roast in the crock pot with some onion soup mix and water, and we have some whole wheat rolls that are more like buns we needed to use by tonight.
Wednesday- Cream Cheese Stuffed French Toast - Doesn't that sound amazing? Cream cheese is going to be on sale at Albertsons tomorrow, and I have some bread I need to use up, so I'm super stoked about this dinner.
Thursday- Tuna Noodle Casserole - A fun twist on a standard recipe. I didn't use the pimentos, but chopped up red and yellow peppers and it turned out great. You can add any vegetables to this, and it still turns out great.
Friday- Sloppy Joes or whatever Eric wants to make. I'm going to be in Clearfield for the evening, so he might just have to fend for himself.
Saturday- Eat out with friends - We have been trying to do this for weeks now, and we're using our restaurant.com certificate to the Smokehouse, so we'll end up paying about $15 for all of us to eat. SCORE!
Sunday- Easy Lasagna- We have some pasta sauce we need to use up, and I just got lasagna noodles for cheap, so I'm excited to try out a new recipe.
I have vegetable and fruit sides that are easy to throw together for these meals to make them more balanced, but I am really excited. This might be me turning over a new leaf!
Even better- I can make all of these dinners with stuff I have on hand! Except for the cream cheese I am getting tomorrow. I'm thinking if we had to live off our food storage for awhile, it wouldn't be bad at all...

I will have you know that this is my biggest admitted weakness as a Mother....planning dinners. I keep meaning to make a calendar, but just haven't disciplined myself to actually do it. Thanks for the extra motivation though....great dinner ideas!
