Happy Tuesday!

O.k. so I'm posting this because I forget about it every single Tuesday- so this time I'm remembering for myself and all of you! Every Tuesday everything is 88 cents at Honks! I love to go in every once in awhile and see what is available at the store. Many times there are things I need or have wanted- and the most I ever pay for those items is $1- gotta love it! Check out your local Honks store today- and maybe you'll find a steal you've been waiting for!

Mango Peach Quesadillas!

June 424.jpg

In our house, we love to eat quesadillas for dinner. But, we're not talking plain cheese quesadillas. We love to throw all sorts of things into our quesadillas - a lot of them aren't even Mexican ingredients. Quesadillas are great because they’re very versatile, inexpensive, and they're great for kids - easy to eat and easy for you to hide healthy ingredients under layers of cheese if you have picky eaters.

This one is pretty simple, but tasty. My method (of blending all the ingredients together) may seem a little odd, but it works. I got the idea from Rachael Ray (these quesadillas that she makes are really good too!) and it works well when you want to incorporate a lot of extra ingredients into your quesadillas. I used black beans as a protein in this recipe because they’re very inexpensive and so good for you. The Mango Peach salsa is my favorite salsa of all time – seriously, I love it (in fact, I pretty much planned my wedding reception around it, but that’s a whole other story). Well, I think that’s enough of an introduction, here’s the recipe:

Mango Peach Quesadillas

12 flour tortillas (I use whole grain)

1 15 oz can black beans, drained and rinsed

1 cup Mango Peach Salsa (I use Chachies brand)

8oz Shredded Mexican blend cheese (I use one with pepper jack)

Cooking spray

Sour Cream

Place the beans, salsa and cheese into the food processor. Pulse until mostly smooth.

Pre-heat a medium skillet over medium heat. Spray the pan with cooking spray. Lay a tortilla in the pan. Spoon 1/3 cup of the filling onto one side of the tortilla, spread to edges. Cover pan with lid. Cook until tortilla is browned. Fold tortilla in half and remove from pan. Repeat for remaining tortillas. Allow to sit at room temperature for 5 minutes before slicing and serving – this will allow the cheese to set and make it less messy to eat. Serve with sour cream

Makes 12 “pocket” quesadillas – serves 6 as an entree (2 per person), 12 as an appetizer (1 per person)

(Note: Even if you don’t need to make this many quesadillas, you can still make up the whole mix, and store it in the refrigerator to use for lunches and snacks throughout the week.)

Here’s what I spent on this recipe:

Tortillas - $2.03 / 10 at Walmart, used $.35 coupon – total for 10 $1.68, used 12 – total $2.02

Black Beans – bought at Smith’s Case Lot sale - $.38

Mango Peach Salsa - $2.50 / 16oz, used 1 cup – total $1.25

Cheese - $2.09 / 8oz at Target, used $1.00 coupon and $1/2 Target coupon – total $.59

Sour Cream - $1.00 / 8oz at Walmart, used $.50 coupon - $.50

Grand Total - $4.74 for 6 servings, $.79 for each serving

Amber cooks up many different recipes every night of the week at her blog Food For Frugal Foodies. She uses ingredients she bought in previous weeks at super low prices and incorporates them into amazing recipes based on ideas from restaurants. Thanks for sharing with us Amber!

TCBY Wednesday Waffle cone .99!

At participating TCBY locations waffle cones are .99 on Wednesdays! That seems like a cheap happy date night if you ask me!

Great Albies sale!

Like always... So I went to Albertsons this morning and had a great trip! Besides grabbing my Hawaiian Tropic coupons not the Banana Boat ones and all my Starkist Tuna coupons being expired (so I DIDN'T use a coupon for those)- I think I did pretty well.

If you haven't checked this sale out yet- go here and look at it! Cereal is .49 a box or FREE, yogurt is .50 for a 4 pack and although I normally try not to spend more than $1.79 for roast- for fathers day I threw a cross rib roast in the crock pot- when I usually use a chuck roast- and it was the most tender delicious roast I have had for a really long time- so I also grabbed a cross rib roast for $1.88 that I'm sticking in my freezer for later. I thought .10 more per pound for that amazing delicious and better meat- I'm going with it.

There are two double coupons in the ad you can use while there too! That makes for some free stuff! Here is the PYP double coupon list of free or dirt cheap things you can get with your double coupons this week.

Also just so you know if you buy 5 Starkist pouches you will get $1 OYNSO catalina that will print and that you can use like cash next time you go to the store. If you find a tear pad for $1.50/3 of them that makes the pouches .25 each- and then with the catalina even more insanely cheap. I heard they still have some at the Lehi Albies and the Orem State St. one if you wanted to check it out. There weren't any tear pads at my store, and like I said my other coupons were expired, so I got four cans of tuna and although I paid the full price after the instant savings of .75 each for them- I still felt pretty good about that. (The catalina will NOT print for the cans- and the cans are 5 ounces where the pouches at 2.5 ounces- I figured more ounces for my food storage if I don't have a coupon.)

Anywho here is my picture and list for the week.

  • 1 cross rib roast
  • 4 cans of Starkist tuna
  • 2 4 packs of Activa Fiber yogurt
  • 2 boxes of Raisen Bran
  • 2 boxes of Frosted Flakes
  • 4 Pillsbury Brownie mixes (perfect for those need to bring something to potlucks)

One more disclaimer- we don't eat Frosted Flakes- but they were free after the sale and coupons, and I love giving things to the Utah Food Bank that I know other people enjoy. So even if you don't eat Frosted Flakes- go ahead and get it and maybe consider donating it to someone in need or a shelter.

This retails for $55.62

I paid .18

That's a savings of 99%!

I did use my $10 catalina from a sale there two weeks ago- but I felt great about what I was able to get, even if I didn't use that catalina.

I plan on spending $5 for 2 things of Banana Boat sunscreen and since I saved so much today, my budget for the week is so full- I'll have A LOT of wiggle room for eating out and miscellaneous items on the trip we're leaving on Saturday for.

Arby's Wednesday deal!

Today at participating Arby's they are giving away a regular roast beef sandwich with any soft drink purchase! If you want a quick cheap lunch- this could be for you.

Free Quart of Glidden Paint!

To celebrate the nationwide launch of the new Glidden paint, the company announced it is helping consumers from coast-to-coast "get going" on their summer painting projects with a free One Quart Giveaway in any of its new palette of 282 colors!

Consumers can register for their free quart online, or by calling 1-800-GLIDDEN from June 25 through July 2, 2009.

Glidden paint is available at Home Depot stores nationwide.

This will be perfect for my lovely wall that we ran out of paint on two years ago, and I just haven't gotten around to getting more paint for! Sweet!

Target deals 6/21-6/27!

As I have mentioned before- Target isn't close enough to my house to warrant a trip usually. But this time there is enough out there that I want and need, and so I'm going to venture out. And I have a $5 gift card and some shoes to return- so I think I could spend nothing out of my budget for the month to go there.

Remember you can print the Target coupons at the kiosks at the front of the store to save you paper and ink. Go to Target.com, scroll down the bottom, click on grocery coupons, click the ones you want- or just print all of them (that's what I do, since it's not my paper) and bring scissors to cut them out right there. So easy and fast.

And lastly- prices will vary from store to store, so the final prices on some of these items might be higher or lower than your actual store price.

No Albertsons double coupons yesterday.

Well, as I'm sure all of you know now- there were no double coupons for Albertsons in the newspaper yesterday. That's o.k. though, they have had so many in the last few weeks, I still feel great about Albertsons. I didn't go to the store last week because I waiting for the doubles to come out to shop today- but I think I'll save that money- and go this next Wednesday. That will give me a little more wiggle room to purchase items for our trip. Life is still great!

Expo TV- Try it!

I found Expo TV about two months ago and wanted to try it out for awhile before passing it on to any of my readers. I have to say I am impressed by the ease of use of the site and what a great resource it can be when I'M looking for a review of a product.

Expo TV takes people like you and me and asks us to review products we already have around our house, such as TV's, strollers, washing machines, cereal, toys, shampoo and hundreds of other items. They pay you $5-$20 based on how much they want a review of that product. You do have to have access to a video camera to participate, but you can always borrow one for awhile until you get enough saved in your paypal account and then buy one on Amazon or craigslist. (Used video cameras are great because people buy them, hardly ever use them, and then sell them because they realize they haven't been using them, but for hundreds of dollars less than they originally purchased it for.)

I have done a few reviews for them and have gotten actual money in my paypal account- or sometimes they ask for special reviews with different rewards- like a Pizza Hut gift card or an Estee Lauder $50 gift set. It actually has been a really fun activity for me and my husband to do together after my little boy is asleep, AND we're MAKING money on it!

My friend just signed up and said that she is getting $25 for her first review of ANY product listed if she posts it before a certain date. The videos have to be at least 1 minute- so 5 minutes making the video, 5 minutes to upload it and in less than 10 minutes you will have made $25! (If they offer you the same deal)

One last part of the company is their tryology program. You check out what products you want to try that they have available- and if you qualify they send you a full size product that you do a review about. I just signed up for their Cheer tryology program and they're shipping a full size container to my house right now! Free stuff, making money by having fun? What more can you want from a job?

I'm excited to see all your reviews that will soon popping up and let me know when you do one- because for every person that watches your review you also get more money. It's only a couple cents per view, but if you get one that a lot of people have watched- that's even more money for you!

Sign up here if you're interested because then we both can be rewarded by Expo! Happy movie making!

Dinner Ideas for the week!

O.k. here's my quick dinner list before I go and reorganize my refrigerator to fit a whole bunch of carrots and apples into it.

Tuesday- Rotisserie Chicken with Artisian Bread and this sunny broccoli pasta salad

Wednesday- Meatloaf mini's (meatloaf put in muffin tins- they cook faster), mashed potatoes and cooked carrots.

Thursday- Potato soup with bacon from the book Deceptively Delicious (I add the bacon), and more Artisian Bread.

Friday- BBQ Chicken Pizza

Saturday- Eric's high school reunion. I'm not going because the tickets are $30 a piece! But I'll eat at my family's house when we go up anyway.

Sunday- Fathers Day- Roast and mashed potatoes, my grandma's amazing carrot recipe (OHHH SOOO good!) and a salad, by the Father's request.

Monday- Something with pork. I need to use up pork- but I usually only make sweet pork for burritos with it and I made that- but have TONS left over and don't want to use it for more burritos (pregnant thing, I can't eat the same thing twice in a month now I guess.) Do you have any creative recipes to use with pork? Help me out! And not Pork salad- that doesn't sound good either- like a good soup or something. Pork Lo Mein maybe....

Also I'm not going to post my store experience this week because I just went to the Buy Low for some fruits and vegetables and a big thing of ground beef that was .78/lb. I spent $10. Monday I'm going to Albertsons for the sale they're having right now and using more double coupons that will be in the Sunday newspaper because I don't need anything on the list- and I can wait until then. AND we're trying to save a little bit of our weekly budget to help pay for our Cali trip. (Big family reunion in a few weeks.)

Quick Question! Do you guys like having links or actual recipes for each dinner- or just the ideas? I guess if you wanted the recipe enough, you ask for it in the comments section. I have found I usually just like the ideas of what I can cook for the week, and then I tweak from there- unless it's an amazing recipe or something I haven't ever made before- then I'll use the recipe.
